Apple Cider Mimosa Recipe (Easy Fall Cocktail)

Apple cider mimosa easy fall cocktail recipe.

Celebrate fall with a sparkling apple cider mimosa! Crisp apple flavor, warm spice, and bubbly champagne make this cocktail festive and fun.

Apple cider mimosa in stemless champagne flute rimmed with cinnamon sugar and garnished with a red apple slice, with apple and cinnamon sticks in the background.

This apple cider mimosa is a simple fall twist on the classic brunch favorite that feels festive but couldn’t be easier to make.

With just a few ingredients, you’ll have a sparkling drink that’s perfect for everything from a cozy weekend brunch to Thanksgiving dinner. It’s light, refreshing, and has just the right amount of sweetness from the cider.

    Ingredients you'll need

Here’s what you’ll need to mix up this festive cocktail.

Jug of apple cider next to bottle of champagne.
    • Apple cider – Fresh apple cider has the best flavor and adds natural sweetness.
    • Champagne or prosecco – Adds the bubbles and crisp acidity that makes this drink sparkle.
    • Vodka (optional) – A splash of plain or flavored vodka gives it a little extra kick. Try a flavor that pairs well with apples like cinnamon, caramel or vanilla vodka.
    • Cinnamon sugar – Rim your glass with cinnamon or apple pie spice for warm fall flavors.
    • Lemon wedge – For rimming the glass.
    • Apple slice – A simple garnish that makes the drink extra festive. Rub the apple slices with a lemon wedge to keep from browning.

    Bar equipment

You don’t need much to make this recipe, just a few basics.

    • Champagne flutes – The classic glass for serving sparkling drinks. I like these stemless flutes that can go in the dishwasher.
    • Small plate – For rimming the glass with cinnamon sugar.
    • Bar spoon – Long-handle cocktail spoon for gently mixing, if needed.
    • Champagne stopper – This air-tight stopper keeps leftover champagne fresh and bubbly in the fridge for a few days.

How to Make an Apple Cider Mimosa

Stemless champagne flute rimmed with cinnamon sugar with another flute upside down on plate and sugar and cinnamon sticks in background.

Rim a champagne flute with a cinnamon sugar mixture.  Just rub the rim with a lemon wedge then, dip the rim in a shallow dish of cinnamon sugar until the edge is evenly coated.

Fill the glass halfway with chilled apple cider. Add a splash of vodka, if using, and stir gently. Slowly top with champagne or prosecco to keep the bubbles from spilling over.

Slice a thin apple wedge to fit the narrow opening of the champagne flute, then rub it with lemon to prevent browning. Garnish the glass with the apple slice and serve right away.

    Variations

Want to switch things up? Try one of these ideas.

    • Spiced cider mimosa – Add a splash of spiced rum instead of vodka for a warmer flavor.
    • Citrus kick – A splash of Cointreau or triple sec adds a hint of orange.
    • Pitcher of mimosas – Make a big batch in a pitcher for easy serving at parties.
    • Non-alcoholic version – Swap champagne with sparkling mineral water, club soda or ginger ale.
