Cucumber Rolls with Smoked Salmon and Cream Cheese

These salmon cucumber rolls are a simple, no-cook appetizer that’s easy to make. The classic smoked salmon and cream cheese pairing, spiced up with fresh dill and everything bagel seasoning, makes them perfect for parties, brunch, or a snack!

Ingredients

  • 1 English cucumber
  • 4 ounces cream cheese softened
  • Everything bagel seasoning
  • 4 ounces smoked salmon thinly sliced
  • 1 tablespoon fresh dill chopped (optional)

Instructions

  • Slice the cucumber lengthwise into thin strips using a vegetable peeler or a mandoline.
  • Lay out the cucumber slices overlapping the edges to make a rectangle. Pat dry with paper towels.
  • Spread the cream cheese over the cucumber strips. Sprinkle a generous amount of bagel seasoning over the cream cheese.
  • Place smoked salmon on top in an even layer. Sprinkle with fresh dill.
  • Carefully roll up the cucumber strips and filling into a log. Then refrigerate for at least 30 minutes.
  • Slice the cucumber rolls into bite-sized pieces. Arrange on a serving platter, and garnish with additional bagel spice and fresh dill.
